Vinificatie: de most word vier dagen koud geweekt voor de gisting. Er volgde een langzame en gestage gisting en de extractie wordt zorgvuldig gecontroleerd om overextractie te voorkomen. De wijn rijpte in 225L Franse eiken vaten [25% nieuw hout / 25% tweede vulling en 50% derde - vierde vulling] voor een periode van 18 maanden. Een klein percentage Amerikaanse eik werd gebruikt om complexiteit en diepte aan de wijn toe te voegen.

Kleur: dieprode kleur met een paarse rand

Geur: donker fruit, leer, zwarte peper en tonen van kruidnagel en kaneel; het eikenhout geeft vanille, mokka en donkere chocoladetonen die het fruit en de kruidige boventonen ondersteunen

Smaak: pruimen, donkere chocolade en een mengeling van specerijen volgen in de volle mond die wordt ondersteund door weelderige tannines die structuur, lengte en finesse toevoegen aan de afdronk

Foodpairing: met wild of een lamscurry
