In seguito alla fermentazione, in parte a grappolo intero, le due parti affinano rispettivamente in botti di rovere e in cemento, prima di essere assemblate.
Da provare con i classici antipasti piemontesi, come il vitello tonnato, si abbina anche con primi piatti leggeri e carni bianche.
