The discovery of cheese is a narrative at least 8,000 years old, dating back to the Neolithic era. Yet, after all of these thousands of years we are still finding new ways to combine the same four basic ingredients - milk, bacteria, salt, and enzymes - into new and exciting products with vastly different shapes, sizes, and colors, and equally complex and varied tastes, textures, and, yes, aromas. In fact, after a long period of industrialized, processed, and standardized cheese, cheesemakers, cheesemongers, affineurs, and most of all consumers are rediscovering the endless variety of cheeses across cultures.

The Oxford Companion to Cheese is the first major reference work dedicated to cheese, containing 855 A-Z entries on cheese history, culture, science, and production. From cottage cheese to Camembert, from Gorgonzola to Gruyère, there are entries on all of the major cheese varieties globally, but also many cheeses that are not well known outside of their region of production. The concentrated whey cheeses popular in Norway, brunost, are covered here, as are the traditional Turkish and Iranian cheeses that are ripened in casings prepared from sheep's or goat's skin. There are entries on animal species whose milk is commonly (cow, goat, sheep) and not so commonly (think yak, camel, and reindeer) used in cheesemaking, as well as entries on a few highly important breeds within each species, such as the Nubian goat or the Holstein cow. Regional entries on places with a strong history of cheese production, biographies of influential cheesemakers, innovative and influential cheese shops, and
historical entries on topics like manorial cheesemaking and cheese in children's literature round out the Companion's eclectic cultural coverage.

The Companion also reflects a fascination with the microbiology and chemistry of cheese, featuring entries on bacteria, molds, yeasts, cultures, and coagulants used in cheesemaking and cheese maturing. The blooms, veins, sticky surfaces, gooey interiors, crystals, wrinkles, strings, and yes, for some, the odors of cheese are all due to microbial action and growth. And today we have unprecedented insight into the microbial complexity of cheese, thanks to advances in molecular biology, whole-genome sequencing technologies, and microbiome research. The Companion is equally interested in the applied elements of cheesemaking, with entries on production methodologies and the technology and equipment used in cheesemaking.

An astonishing 325 authors contributed entries to the Companion, residing in 35 countries. These experts included cheesemakers, cheesemongers, dairy scientists, anthropologists, food historians, journalists, archaeologists, and on, from backgrounds as diverse as the topics they write about. Every entry is signed by the author, and includes both cross references to related topics and further reading suggestions. The endmatter includes a list of cheese-related museums and a thorough index. Two 16-page color inserts and well over a hundred black and white images help bring the entries to life.

This landmark encyclopedia is the most wide-ranging, comprehensive, and reliable reference work on cheese available, suitable for both novices and industry insiders alike.

Doggo approved!
Puppy said, "Yes, please." She's a large breed and chews through some toys like nothing. It is May now, and this one is still standing strong. It doesn't have any pieces coming off, so it's quite hard and safe, nothing is coming off for her to eat. It is really resistant to chewing from a Great Pyrenees, and for the price you can't beat it, as it will last months.

Dog tested, dog approved
This is a large, heavy-duty bone. And a great one. My Pitt-mix is very tough on things and can destroy most chew toys in short order. This actually has held up very well to his best attempts. As shown in the picture, after a lot of use over several weeks the most that he's been able to do is to put some small bite marks in it. I'm impressed. That's largely due to the material used. It's a dense, rubbery-type material that's resilient to biting/cutting/tearing. Very solid without being hard. Kind of along the same lines as that used for the popular Chuck-It toys if you're familiar with those (but heavier). I like this softer material better than the nylon bones which he loves but I'm afraid are going to crack a tooth at some point. Has some scent to it but does not have a strong smell. Can't vouch for the flavor but he seems to enjoy it. Again this is large and heavy toy. Probably a little too big/heavy for smaller dogs under say 40lbs or so. Some probably could do it but really better for the bigger dogs. Given how long this one looks like it's going to last, I'd say that it's a very good value. Bottom line - Dog likes it. I like it. Everybody's happy. Great bone. Buy it.

Flavor/Scent May Not Be Very Strong
My pup is picky about toys and the only ones that hold his interest are mostly the scented rubber toys from Playology, They’re great, but expensive, and I was really hoping this would be a cheaper alternative. It really looked like the kind of toy he likes. It’s heavy rubber with a softer texture than the hard toys out there, and it had a lot of surface grooves that lets him grip it with his teeth easily. I gave it to him and he was excited for all of 30 seconds, then he discarded it and hasn’t looked at it since. I suspect the flavor/scent may not be as strong but that’s just a guess. I don’t know if it’s a flaw in the toy or simply a picky pup, so I hesitate to rate this down for that. It does look like a really nice toy and if your dog isn’t a jerk like mine it may be great, and it’s definitely a good price.

Heavy duty rubber bone
This bone is really heavy duty. It's got a groove down the middle of you you can put your pups favorite lickable treat. My 36 lb aussie enjoyed chewing on this and was nibbling the ends. This bone has held up to her chewing it with only a couple little pieces coming off.

Big hit with my super chewer.
Here’s an expanded, Amazon-friendly version that keeps a natural, human tone while adding helpful detail: This is a truly heavy-duty chew bone and a great option for aggressive chewers. The first thing I noticed when I took it out of the package was the weight. It’s solid and well made, so it definitely feels like it’s built to last. Because of that, I would recommend being mindful when handing it to your dog and avoiding tossing or dropping it on hard floors or toes. My dog, Yukon, was instantly thrilled with it. From the moment I gave it to him, he’s been carrying it around proudly and settling in to chew on it for long stretches of time. It’s kept his attention much better than lighter chews, and it’s holding up well to his strong jaws so far. I also love that it provides great enrichment and gives him a safe, satisfying outlet for his chewing instincts. Overall, this chew bone has been a big hit in our house. If you have a powerful chewer and are looking for something durable that will actually keep them engaged, this is a solid choice. I’m very glad I picked it up for Yukon and would recommend it to other dog owners with heavy chewers.
