All our wild venison is hung in the fur for up to 2 weeks and then dry aged for a further 7 days. Our team of Artisan butchers cut the Shank from the hind leg of our properly wild venison, leaving you with a good chunk of delicious meat perfect for your recipe.
Our wild venison comes from vital conservation management of the South West countryside. All our wild venison is completely free ranging and it is probably one of the most ethical and sustainable choices for your plate.
