Wine making

Produced from typical Dão grape varieties, from a vineyard with 50 years old. Mixed red and white grape varieties, in the proportion of 80-20. Manual harvest in the end of September. The winemaking was done in stainless steel vats with the white and red grapes all mixed. Natural fermentation (with no addition of yeasts).

We used dried chestnut blossom flowers to replace the sulfites addition. After the fermentation it was pressed and aged in stainless steel vats for 12 months. No fining, no filtration. 9300 bottles were produced, all numbered.

Live aromas of fresh fruit. The freshness is also very lively in the mouth, typical of its youth, with very elegant tannins and a persistent and vibrant aromatic profile. Very personalized profile resulting from the presence of a wide variety of indigenous grapes.

Serve Advices

Serve at a temperature of 15ºC-17ºC.

Food Pairing

Excellent match for meat and smoked pork, game and poultry, pasta and cheeses.
